It takes many hours to dissolve but does not crystallize. Having been under the impression that maple syrup doesnt spoil, we wanted to look in to the matter. Heating a solution allows it to hold more dissolved material. Doh! Now if your syrup is over density and makes crystals will it stop building crystals when it reaches the right density.
